Fried Satay Squid (香炒沙嗲鮮魷)


(Serves 2) Ingredients: 1/3 lb of fresh squid, 1/6 lb of pork meat, 10 grams of sliced onion, 10 grams of sliced green pepper, 10 grams of sliced mushroom, 5 grams of crushed garlic, 5 grams of shallots, brandy to taste, 1 oz of satay sauce, 2 pieces of pandas leaves and suitable amount of vegetable oil Method: 1) Slice squid and pork meat and marinate in mixture of salt, pepper, sugar, cornflour, brandy, and pandas leaves then Saute; 2) Saute crushed garlic, shallots, sliced onion, sliced green pepper and sliced mushroom in a wok. 3) Add squid and stir fry. Add Satay sauce and cook for 5 minutes before serving.

配料(二人份量): 鮮魷1/3磅,豬肉1/6磅,洋葱片10克,青椒片10克,冬菇10克,蒜茸5克,乾葱茸5克,白蘭地酒適量,生粉少許,鹽10克,胡椒粉適量,糖適量,沙嗲醬1安士,香葉2片,菜油適量 做法: 1) 將鮮魷和豬肉切條,用鹽、胡椒粉、糖、生粉、白蘭地酒、香葉醃好,走油; 2) 用鑊落菜油爆香蒜茸、乾葱茸、洋葱條、青椒條、冬菇條; 3) 將鮮魷片和豬肉條加入炒,然後加入沙嗲醬調味燴約5分鐘上碟。
